Spinach Croquettes

For an evening snack, an amazing and quick recipe.. With this, I express my love for spinach, once again..:)

Ingredients:

spinach(finely chopped)- 4 cups
wheat flour- 4 tbsp
green chilies (finely chopped)- 4-5
ginger (finely chopped)- 1/2 inch
sugar- 1 tbsp
milk- 1 cup
salt- to taste
paneer- 1/2 cup
sweet corn (boiled)- 1 cup
oil- 2 tbsp
oil- to fry




Procedure:

Heat oil in a pan. Saute the ginger into it. Add chilies to it. Add spinach to it. Cook for a minute on fast flame.Let it cool.







In an other pan, add a tbsp of oil and saute the wheat flour into it. Once it starts changing its color, add water and milk.




Add salt and sugar to it. Add spinach and corn as well.Mix well. Add crumbled paneer as well. Turn of the flame as the mixture becomes thick.









Let the mixture cool down. Apply some oil to the fingertips and take small portions of the mixture and place it on the plate. Set it in a refridgerator for atleast 15 minutes.



Now, after cooling, give the chroquettes the shape you want. Dip these into the slurry( to make slurry, take 1 tbsp flour and add 3 tbsp of water to it. Add salt) and roll the chroquette in the semolina or dried bread crumbs.









Now, fry the croquettes and serve with your favorite chutneys.



Enjoy these croquettes, crispier from outside and melting in your mouth..:)
