Sweet Corn Pitla



Sweet corn is one of my favorite ingredients as the recipes made of it never fail. It goes well with many of the common ingredients we use. This recipe is inspired by my sister, who had added a variation to the Maharashtrian traditional recipe, Pitla by adding sweet corn kernels to it. I am sure, once you make, you will enjoy it to the fullest..

Ingredients:

Besan - 1/2 cup
boiled sweet corn kernels- 1 cup
buttermilk- 1 1/2 cup
salt- to taste
sugar- to taste
lemon juice- to taste
red chili powder- 3/4 tsp
turmeric- 1/4 tsp
oil- 1 tbsp
mustard seeds- 1/2 tsp
cumin seeds- 1/2 tsp
asafoetida- 1 pinch
curry leaves- 8-10



Procedure:

Mix the besan with buttermilk, salt,sugar, lemon juice, red chili powder, and a little turmeric. Ensure that no lumps are formed.

Now, for tempering, heat the oil in a kadhai. Add mustard seeds. As these crackle, add cumin seeds, as these start crackling, add hing and curry leaves. 


Now add the besan mix to the tempering. Stir continuously. Add boiled sweet corn as soon as the mixture starts thickening.

Remove the pitla from the flame when it attains the semi solid curd like consistency. Garnish with coriander. Serve hot with the bhakris, roti(fulka), etc.
