Muthiya

Muthiya is a Gujarati dish that is given shape using fists. Hence, its known as muthiya. Muthiya can be prepared in various variants. Muthiya is perfect recipe for the breakfast and can be easily made with minimal preparation and cooking time.
Let's see how to make this recipe..

Ingredients:

  • Doodhi/lauki/Bottle Gourd (grated) - 1 medium sized
  • Jowar flour- 1 cup
  • bajra flour- 1 cup
  • besan/ gram flour- 1/2 cup
  • rava (fine and roasted) -1/2 cup
  • red chili powder- 1 tsp
  • turmeric powder -1/2 tsp
  • dhaniya/coriander powder - 2 tsp
  • baking soda- 1 1/4 pinch
  • lemon juice- 2 tsp
  • sugar- 4 tsp
  • oil- 1/2 cup
  • water- as per requirement
  • salt - as per taste

For tampering:
  • oil- 1 tbsp
  • mustard seeds/ rai dana- 1 tsp
  • hing/asafoetida - 1 pinch

Procedure:

Take the grated lauki. Mix all the flours and add the lauki to it.







2. Add red chili powder, turmeric powder and coriander powder to it.






3. Add baking soda. Add lemon over baking soda. Add sugar and oil. Mix well. ( Do not over mix it. Just lightly fold the mixture with hands).










Step 4. Add salt. Let it rest for 5 minutes. Add water to it ( if required. as lauki will leave water after adding salt) to make a soft dough. ( dough soft enough so that you can roll it in way given below)

Make all the muthiyas in same fashion. Keep the muthiyas in a greased steaming utensil.


Step 5. Make all the muthiyas, let these steam for 15-18 minutes on high flame. Post that, these look like below.


Step 6. Let the muthiya dry and then cut these into small round pieces. Now, for tempering heat oil. Add mustard seeds, hing. Add cut muthiya to it. 

Let the muthiya fry nicely in oil for 5-7 minutes. Serve hot with your favorite chutney.
