Sabudana khichadi is the most popular recipe cooked on fasts in Maharashtra
I am sharing the same recipe with you.This is a basic version of it. You can add potatoes,etc to customize it as per the taste.
Soaked Sabudana: 2 cups
(Soak sabudana into water for 3-4 hours.)
Crushed peanuts: 1 cup
Whole peanuts( roasted) :1 cup
Green chilies: 4-5
Cumin seeds- 1/2 tsp
Salt: as per taste
Sugar: 1 tbsp
Lemon juice : 1 tbsp
Coriander(chopped) - 1/2 cup
Oil- 2 tbsp
Heat up the oil. Add cumin seeds. Let them crackle.
Add the peanuts and let them cook.
Add sabudana mixture and mix all the ingredients well.
Let it cook for 5 minutes on slow flame with lid closed on the vessel. Add the coriander leaves to give it a better color and add nutrient value.
Serve hot.
