Khandvi- A gujarati delicacy


Khandvi is a Gujarati dish made up of besan. It is a non-fried yummy delicacy. These bite-size rolls will make you their fan and once you master the art of making these rolls, people will never fail to praise your cooking skills. Lets see, how to make it.
Ingredients:
  • Besan- 1/2 cup
  • Water- 1 cup
  • Buttermilk- 1/2 cup
  • turmeric powder- 2 pinches
  • ginger-chili paste- 1 tsp
  • salt- as per taste
  • mustard seeds/rai- 1/2 tsp
  • oil- 2 tbsp
  • curry leaves- 10-12
  • coriander- finely chopped (for garnishing)
  • grated coconut- for garnishing
  • sesame seeds -1 tbsp

Procedure:
1. Mix besan, water and buttermilk well in the given quantity to make a mixture like this.
Add the ginger chili paste and turmeric powder to it.

2. Now, heat the mixture and stir it continuously to make a mixture thick enough so that it doesn't stick to the spatula or pan.Make sure it does not form lumps. Just to ensure that it has got the perfect consistency, spread a little of it to the flat surface and test if it rolls easily. 

3. Now, remove it of the flame. Grease a flat surface with oil. Spread the mixture on that surface immediately as thin as possible, with the help of spatula.


4. Now, just cut the spread mixture into long strips.

5. Sprinkle coriander and grated coconut on the strips.
Once the strips cool down, roll the strips into rolls, very carefully.
Make all the rolls.

6. Now, heat up oil. Add mustard seeds, curry leaves and sesame seeds to make a tampering. 
Spread this tampering on rolls and serve these rolls with coconut and green coriander chutney.


A yummy and one of the healthiest of the Gujarati dishes is ready within few minutes.
