Vrat kachori is an interesting delicacy made up using coconut and boiled potatoes. It is specially served with imli ki chatni and is one of my favorite recipes for vrat. I am sure, you will love this recipe...
Serve the kachoris with your favorite chutney.
This is how the stuffed kachori looks..
Ingredients:
- fresh coocnut grated- 1/2 cup
- coriander(finely chopped)- 1/2 cup
- potatoes(boiled)- 6 (medium in size)
- green chili paste- 1 tsp/ as per taste
- ginger paste- 1/4 tsp
- lemon juice- 1 tsp
- tapkir/aara root flour - 1/3 cup
- sugar - 1tsp
- salt to taste
- oil to fry

Procedure:
For filling:
Mix grated coconut and coriander. Add green chili paste and ginger paste to it. Add salt to taste. Add a sugar to it. Filling is ready.
For covering:
Take boiled potatoes and grate these. Add salt to it as per taste. Add tapkitr aata. Now make this mixture just like dough. Make sure you don't mash it too much or the potatoes will get sticky.
For kachoris:
Now take the covering dough. Take little mixture out of it and make a puri like structure out of it(a structure which would enable us to stuff the filling inside the covering.)
Now, try frying one kachori. If you find its breaking, just dust the rest of balls in some upwas flour. And then try frying.
Serve the kachoris with your favorite chutney.
