Kothimbir Vadi is coriander based recipe which is a very popular dish of Maharashtra. It can be made with different methods. I will share the recipe of shallow fried kothimbir vadi which is healthier than the deep fried one but tastier than the steamed one.

- coriander (finely chopped) - 1 cup
- besan- 2 cups
- turmeric powder- 1/2 tsp
- red chili powder- 1/2 tsp
- hing/asafoetida- optional- a pinch
- ginger-chili paste- as per the requirement
- salt to taste
- oil to grease
- sesame seeds- 1 tsp
- water- as per the requirement to make the batter
- ajwain- 1 tsp
- oil to shallow fry
Procedure:
1. Add the besan, coriander, red chili powder, turmeric powder, hing, ginger- chili paste, salt, ajwain and water to make the batter with the consistency like the cake batter.
2. Now, for microwave,
Grease the microwave safe(possibly flat) cookware with oil and add the batter into it. Cover it by a microwave safe lid.
Now, microwave it for 5 minutes approximately on the high temperature.
For gas, you can just steam it as we steam dhokla.

To check if your batter is really cooked, just put the knife in the middle as shown in the image.
If the knife comes out clean, you can proceed further or you need to cook it accordingly.
Once done, cut it into small bite-sized pieces. You can cut into shapes you desire.
Now, you can have these as it is. But I have shallow fried it and finally it looks like this.
(It looks much more yummier in actual than in the above image. :D)
