Lavang
Latika with a crazy twist
Ingredients:
For stuffing
Kaju
(crushed) – ¾ cup
Gulkand
– ¾ cup
Elaichi
powder- 2 pinches
For covering
Maida-
1 cup
salt
(very little- just for taste)
water
as per requirement to make dough
Oil
for frying
Procedure:
To make the dough:
Add
the maida, salt and make a semi-tough dough out of it.
To make the stuffing:
Add
crushed cashews and gulkand together. Add elaichi powder to it.Grease
hands with oil and make small bite-size balls out of it.
Roll
out thin rotis out of maida and cut it into pieces as shown in
following image.
Now
place these strips on one another making a plus sign as shown in the
image below.
Now,
place the gulkand ball in the middlle as shown in the image below.
Now,
fold each side of the structure step by step as shown in the images
below.
After
folding these, just make sure that the corners are no left open by
pressing the corners (Hence the conical shape of the corners, in the
image. )
Place
the laung or clove in the middle, thus closing the structure and
fixing the pockets.
Deep
fry these latika in oil on the slow flame till golden brown. Tasty
and yummy lavang latika are ready to serve.
(This is the result of the survey which was conducted by me on my family members to know which was the best recipe amongst the ones cooked for Diwali :)
