Kachoris from the lanes of mathura are especially famous for their mouth watering taste and are among st the most popular dishes from India. These are available in many variants all over India and here I present before you, my innovation and contribution to these famous kachoris.. Palak Paneer Kachori. These kachoris taste best when served with the green chutney made up with coriander and mint. Here is how you can make these kachoris..
For covering:
All purpose flour- 1 cup
Oil- 1 tbsp
salt- to taste
water- as per requirement
For stuffing:
palak/spinach- finely chopped- 1 cup
paneer/ cottage cheese - crumbled - 1 cup
garam masala powder- 1/2 tsp
green chili- finely chopped- 3-4
sugar- to taste
salt- to taste
chat masala powder - 1 tsp
hing/asafoetida- 1 1/2 pinch
oil- 1 tsp
bhujiya sev- 1/4 cup (optional)
Oil for frying
Procedure:
For covering:
Take all purpose flour and add oil to it. Mix it well. Add salt.Add water to make a soft dough out of it.Close the dough with plastic and let it rest for 10 minutes.
For stuffing:
Mix paneer, palak and green chili.
Add garam masala, chat masala, salt and sugar.
Add bhujiya sev.
Heat a little oil and add asofoetida to it. Add this oil to our mixture.
Mix well and stuffing is ready.
For assembling:
Roll out puri from the dough.
Place the mixture into the center and fold the puri from all the sides. Seal the sides. And gently press with hands from all the sides. ( Ensure that no mixture gets out of the puri)
Fry this puri into medium heated oil till it achieves golden brown color.
Serve this puri with your favourite chutney and enjoy the beautiful monsoon season with hot kachoris..
