Bharvan Baingan ( In Maharashtrian Style)

This is a special maharashtrian dish, cooked with an awesome combination of the eggplant(brinjal) , peanuts and the garlic. However, I have tried to give this a jain touch by eliminating the usage of garlic. I find it amazingly tasty and think everyone must try this.Hence, sharing this recipe..I hope you like it. 


Ingredients:
  • Brinjals (5-6, samll ones)
  • potatoes( 5-6 optional ) 
  • sesame seeds (2 tbsp)
  • crushed peanuts ( 1 cup)
  • salt - as per taste
  • turmeric powder - 1/4 tsp
  • red chili powder - 1 tsp/ as per taste
  • coriander powder- 1 1/2 tsp
  • garam masala powder- 1 1/2 tsp
  • chopped coriander leaves- 1/2 cup
  • oil- 2 tbsp
  • water- 1 1/2 cup
  • cumin seeds- 1 tsp










Procedure:

1. Mix crushed peanuts, sesame seeds, and other spices and grind them in a mixer. Add the coriander leaves to it.









Step 2. Wash the vegies well and peel off the potatoes. Cut the stem of the brinjal from top.
Now, Put the cut into brinjal and potatoes as shown in the image below. Make the cuts deep till 3/4 th of the size of vegetable. Not deeper than it.


Step 3. Now stuff the mixture prepared in Step 1. into these vegetables. Ensure you stuff them with appropriate quantity of mixture.




Step 4. Heat up oil in a pan.


Add the cumin seeds and allow these seeds to crackle.






Now add the vegetables and saute them into the oil.


Step 5.  Add water, close the vessel and let the vegetables cook. Ensure that the vegetables get cooked well and serve hot with chapatis. Trust me, it tastes best with the jowar/ bajar bhakari/rotlo.. Your recipe is ready to pamper your taste buds..
