Oats Nuggets


The TasteBhiHealthBhi Challenge from my friend continues and here comes another outcome of the same.. Oats spinach nuggets...Delicious and Healthy yet quick..Give it a try and give your taste buds a treat without impacting the weigh scale :)

This is how the finalized product looks like :)





Ingredients:

Oats- 2 cups ( 1 cup= 235 ml)
Wheat flour- 1/4 cup
Milk- 3/4 cup
spinach (finely chopped) - 1.5 cups
oil- 1 tbsp
black pepper powder- 3 tsp
salt- to taste
sugar1-tbsp
lemon juice- 1 tbsp
garam masala powder- 1 tsp
green chili paste- 1 tbsp
chat masala powder- 2 tsp
pudina/ mint leaves- 15-20
wheat flour slurry ( water 4 tbsp + 2 tsp wheat flour )
oats- for coating- 3/4 cup
oil- for frying

Procedure:

Dry roast the oats till fragrant, till color slightly changes to light brown. 



After roasting, keep the oats aside. Till then, heat oil in a kadhai.


Roast the wheat flour till fragrant. Be sure it does not burn. Do it on medium to slow flame.


Add milk as it is cooked. Add all milk and mix well to ensure no lumps are formed.


Add black pepper powder and salt to taste in this sauce.


Add finely chopped spinach to it. Mix well.


Add oats and adjust salt accordingly.


Mix well and keep it cool.


As it comes to room temperature, add sugar, garam masala, green chili paste, chat masala and lemon juice. Mix well.


Now, make slurry of wheat flour and water. Add chopped mint leaves, chat masala and salt to it. Mix well. 

Make small nuggets out of the cooled down mixture ( with this measures, I made around 60 nuggets)

Now, take some oats into a plate for covering.


Dip the nuggets into the slurry and coat it with oats. Do it twice.


Deep fry in oil on medium heat. You can avoid deep dry by using air fryer.


Take out when golden brown serve hot with ketchup, lemon wedge and mint leaves. Sprinkle red chili powder and chat masala powder while serving. Enjoy these healthy nuggets made in no time :)

Hara Bhara kababs

When we talk about kababs, Hara Bhara Kababs is most talked about in the vegetarians. It is the recipe which defines Kababs amongst us. It is a wonderful combination of the green vegetables and potato to make a perfect starter for any occasion. Lets find out the quick recipe to make the hara bhara kababs..


Ingredients:


Coriander - 1/4 cup
coriander finely chopped- 1/2 cup
spinach- 1/2 cup
green chilies- 4-5 finely chopped
ginger- 1/2inch - finely chopped
lemon juice- 1 tsp
potato -boiled and mashed- 2 - medium
green peas-boiled and mashed- 1 cup 
besan- 1 tbsp - for binding
bread crumbs- 1 tbsp-  for binding
salt- to taste
sugar- to taste
garam masala- 1/4 tsp
jeera powder- 1/2 tsp
til- 2 tsp
chat masala powder- 1/2 tsp

Procedure:


Boil the water. Add spinach leaves.
 Add some sugar and salt to help spinach retain its color. Blanch the leaves by leaving them in boiling water for 3-4 minutes.


Now, let it cool. Add coriander leaves into the mixer jar with some green chilies and ginger and add these blanched spinach leaves. Grind it into a fine paste.

Now, take boiled and mashed potatoes,add some chopped coriander, add matar, add ginger, finely ground paste, besan, lemon juice, chat masala powder, garam masala and jeera powder. 
Add salt, sugar and mix well. Add bread crumbs.







Now, make balls out of it. Roll out in the semolina and sprinkle the til on the kababs.


Make the desired shape out of these and shallow fry the kababs. 
Serve these with green chutney and ketchup.

Healthy Desi Nacho chips

Snack is my personal favorite among st all the meals. But the unhealthy ones pamper the taste buds, but hamper the health..So, a mid-way between both.. Here comes Healthy option to the nachos.. 

Preparation time- 20 minutes
Cooking time- 20 minutes

Ingredients:



Jowar flour- 1/2 cup
Wheat flour- 1/2 cup
Spinach(finely chopped)- 1 cup
salt- to taste
til/sesame seeds – 1 tbsp
oil- 1 tsp
oil- to fry

Procedure:



Mix flours, spinach, salt, til and 1 tsp of oil.



Make a semi-tough dough out of it. Keep it aside for 5 minutes.




Make 6 equal parts of it and roll out each part into roti like round flat structure.






Now cut each round structure into 8 equal parts to make the nachos chips.



Deep fry the chips on slow flame till golden brown in color.
Serve the nachos with your favorite sauce or with salsa.




Use these as tea-time snack or as nachos chips.
