Dry kachoris is a royal snack item with the richness of the dryfruits and the taste of besan sev/ gathiya. This is a snack item which once made can be stored for fifteen days in an airtight container,however, I bet, you will not be able to resist the taste and might finish these all at once with your family. This stuffing for it can be made within 10 minutes and frying will take around 10 minutes or if baking, it will take 15-20 minutes. Have a look at this recipe:
Ingredients:
- 1/2 cup gathiya/ sev slightly crushed in the mixer grinder.
- 1/4 tsp turmeric powder
- 1 1/2 tsp red chili powder
- 1.2 tsp garam masala powder
- 1/4 tsp black pepper powder
- 1/2 tsp aamchur powder
- 1 tbsp fennel seeds / saunf
- 1 tbsp coriander seeds
- 1 tsp til
- 1/2 tsp poppy seeds / khus khus
- 1/4 cup cashews(chopped)
- 1/4 cup almonds(chopped)
- 1/4 cup raisins
- 2 tbsp powdered sugar
- salt to taste ( a little less than usual as gathiya/ sev will already have the salt)
- 1 tbsp
- 1 1/2 cup whole wheat flour
- 2 tbsp oil
- salt to taste
If frying, then oil for frying. If baking, 1 tsp oil for brushing the oil.
Procedure:
1. Heat the oil in a kadhai.
2. Roast all the dry spices in the oil on a low flame.
3. Add the dry fruits and saute for 25-30 seconds on low flame.
4. Add the crushed gathiya, sugar and salt.
5. Your stuffing is ready. Cool it.
6. Make the dough of the flour, salt and oil. Make a soft dough. Make 12 equal parts.
Roll that part into a 4 inches diameter puris.
7. Place the filling into it.
8. Roll the kachoris by bringing the side sides together and stick the sides with the help of the water if necessary.
9. Roll all the kachoris similarly and roll into round balls again.
Once baked/ fried, serve the kachoris with the chutney and enjoy :)
