Ingredients:
- rice- 3/4 cup
- moong dal- 3/4 cup
- brinjal diced- 2 to 3 medium
- tomato diced- 2-3 medium
- carrots diced- 2 medium
- sweet corn kernels- 1/2 cup
- green peas- 1/2 cup
- cashews- 1/2 cup
- peanuts- 1/2 cup
- green chilies- 4-5
- curry leaves- 5-6
- black peppercorns- 8-10
- laung- 4-5
- salt- to taste
- sugar- just for taste
- ghee- 2 tbsp
- cumin seeds- 1 tsp
- turmeric powder- 1/4 tsp
- hing- a pinch
Procedure:
Soak washed rice and dal for 15 minutes. Till then, heat oil in a pressure cooker.Add cumin seeds. Let them crackle.
Add cashews and cook them until golden.
Add curry leaves, green chilies,peppercorns, laung (cloves) and saute.
Add peanuts.
Saute well. Add turmeric powder, hing.
Add tomato. Cook for a minute.
Add brinjal,carrot, sweet corn, green peas.
Mix all the vegetables well and let it simmer for 4-5 minutes.Then add salt and sugar for seasoning.
Add 4.5 cups water. Add soaked rice and dal.
Pressure cook for four whistles and then the khichadi looks like this.
Add a tea spoon of ghee to it. And give it a very good mix by continuously mixing it for 3-4 minutes.
After mixing it for 3-4 minutes, your khichadi is ready.
Serve hot.
