Talking about Rajashtani food, the famous Dal Bati comes to the mind immediately. Here is the perfect recipe to the authentic Rajasthani dal bati which takes you directly to the state which always welcomes us by saying ' Padharo Mhare Des'
Ingredients:
For Panchratna dal:
Yellow Moong dal: 1/3 cup
Chana dal - 1/3 cup
toor dal- 1/3 cup
moong- 1 tbsp
urad dal- 1 tbsp
red chili powder- 3 tsp
aamchur powder- 2 tsp
coriander powder- 1 tsp
garam masala powder- 1/2 tsp
hing- a pinch
cumin seeds- 1 tsp
turmeric powder- 1/2 tsp
green chilies- split into half- 3
imli/ tamarind- 3-4 1 inch pieces
laving/ cloves- 3-4
salt- as per taste
ghee- 1 tbsp
For bati:
wheat flour- 1 cup
rava/ sooji/ semolina- 1/2 cup
besan- 2 tbsp
milk- 8 tbsp
ghee-4 tbsp
salt as per taste
Procedure:
For bati:
Mix all the ingredients well and knead into a tough dough. Knead for 5 minutes approx. Add water it needed. Dough should be tough.
This is how the dough turns out to be.
Divide the dough into 10 rough parts.
Take some ghee into hands and roll the balls to make the bati. I have made this shape to ensure it cooks from all side. Else just ball shaped bati can be made,
Boil some water and add batis into it. Boil till batis come up in water. This shows batis are cooked.
Take out the batis. Now, preheat the oven at 200 degrees Celsius.
Place the batis on the tray and cook for 10-15 minutes till these become golden in color.
Your batis are ready once baked. Alternatively, these can be fried on slow flame in ghee.
For dal:
Mix all the dals and wash these well. Add water and soak these dals for about 30 minutes.
Then add some salt as per taste and pressure cook the dals for about 2-3 whistles after adding 4 cups of water.
Now, in a bowl, take some water. Add red chili powder, coriander powder, turmeric powder and mix well to make this spices paste. This way we ensure that we do not burn our spices.
Now, heat 1 tbsp of ghee in a pan.
Add the cumin seeds.
As these turn aromatic, add split green chilies, cloves and cook till green chilies get cooked well.Add hing.
Add the spices in the tempering. Cook well till spices get cooked. Add the cooked dal.
Mix well.
Add tamarind, garam masala powder and aamchur powder. Give it a nice boil. Add water if necessary.
Your panchratna dal is ready.
Now that dal bati is ready, serve the dal bati by pouring the ghee over batis and a spring of coriander.
