How about kababs made with the goodness of all the vegetables? Awesome right.. So is this recipe.. Vegetable seekh kababs rich with goodness of all the vegetables..
Ingredients:
Gram flour/ besan - 2 tbsp
cabbage- 1/3 cup
carrots- 1/3 cup
green peas- 1/3 cup
sweet corn - 1/3 cup
potatoes boiled and mashed- 5-6 medium sized
green chili paste- 1 1/2 tsp
finely chopped ginger- 1 tsp
cumin seeds- 1 tsp
oil- 1 tbsp
coriander- 2 tbsp
pudina/ mint leaves- 12-15
garam masala- 1/2 tsp
red chili powder- 1 tsp ( as per the taste as we already have green chili paste)
turmeric powder- 1/2 tsp
coriander powder- 1 tsp
cumin powder- 1/4 tsp
black pepper powder- 1/2 tsp
lemon juice- from 1/2 medium lemon
sugar- 1/2 tsp
salt- to taste
seekh sticks- 8-10
chat masala- a pinch
Procedure:
Heat oil in a pan. Add cumin seeds. As the seeds crackle, turn aromatic, add the ginger and chili paste. Cook well.
Take it to the side and add the gram flour and cook well till it turns aromatic.( to avoid burning, cook on low flame and turn continuously to ensure that it does not burn.)
As soon as it turns aromatic, add the vegetables, cabbage, carrots, green peas and sweet corn.
Mix well. Let it cook. As soon as it cooks, turn off the flame and let it cool. As it cools down,add coriander and pudina and churn it in a mixer till it turns out into a fine paste.
Take the mixture in a bowl and add the mashed potatoes to it.
Add the spices, i.e garam masala powder, red chili powder, coriander powder, turmeric powder, black pepper powder, lemon juice, sugar and salt.
Mix the mixture well. Oil your hands and apply the mixture to the wet seekh sticks.
Apply it in this way. Prepare a batch of seekh sticks.
Cook these by shallow frying the kababs on a tava.
Cook well from all sides and serve hot with green chutney and tomato ketchup. Sprinkle chat masala for taste.
