Sometimes, all we want is to get the cooking done faster and just enjoy the simple yet tastier recipe.
This recipe of my mom is just adequate to this mood of ours. Quick cooking and simpler flavors.
Here is how we can make it in a jiffy...
Ingredients:
- Ghee- 1 tbsp
- rice- 1 cup
- jeera/cumin seeds- 1 tsp
- water- 2.5 to 3 cups
- salt- to taste
- red chili powder- for garnish
- green chutney- for garnish
Procedure:
1. Heat ghee in a thick bottomed pan.
2. Add the jeera seeds and let these crackle.
3. Add the water and let it boil.
4. Wash the rice properly. Small grained rice is preferable.( new rice, not aged is preferred)
5. Add the rice to the boiling water.
6. Pressure cook the rice for 5-6 whistles and mash it.
7. Now, grease a plate and spread the mashed overcooked rice into it.
8. Let it cool. Now, cut the barfi into pieces and sprinkle chili powder. Serve with green chutney.
