One of the most popular snack all over India is a small, triangular snack called Samosa. This samosa can be a star starter of a party or can even replace the popular popcorn during the Movie interval. This snack is equally tasty when made on the nukkad/corner of lane or in a five star hotel serving Indian meal. I have tried to give this traditional samosa a twist by preparing the pinwheels out of the samosa mixture and covering. I hope you all will try this at home and I am sure this can be 'jaan' of your party every time you serve it as a starter.
This is the way I have presented it:
Ingredients:
For filling:
- Mint leaves- 15-20
- Coriander- 1/4 cup
- green chilies- 7-8
- potatoes-5-6 medium sized- boiled and mashed
- green peas- 1/2 cup 0- boiled and mashed
- salt- as per taste
- sugar- 1 tsp
- aamchur powder- 1 1/2 tsp
- garam masala powder- 1 tsp
For covering:
- Maida/ all purpose flour- 1 cup
- oil- 1 tbsp
- salt- to taste
- water- to make dough
Oil for frying
Tomato ketchup for garnishing and serving.
Procedure:
First of all, make a tough dough( tougher than the normal chapatis, like poori dough) by mixing all purpose flour/maida, salt, oil and water. Rest the dough for minimum half hour.( cover the dough while resting it)
To make the filling:
1. Grind the coriander, mint leaves and green chilies into a coarse mixture. Do not add water or lemon juice for easy grinding. Keep the mixture dry.
2. Add this mixture to boiled and mashed potatoes.
3. Add garam masala powder, aamchur powder, salt, sugar.
4. Add mashed green peas and mix the mixture very well to make the filling.
5. Filling is ready. Now, rest the filling for 10 minutes at the least.
6. To make pinwheels, make a big roti out of the dough we had made earlier and place the filling evenly over it.
7. Now, roll the roti tightly to make a roll.
8. Cut the roll into the pieces. One roll can make approximately 18 pieces. With this measure, we can make approximately 3 such rolls.
9. Now, deep fry these rolls into medium hot oil till golden brown. Serve the rolls with tomato ketchup.
